I've been working at an ad agency making websites for the past 2.5 years. I've used a smattering of different technologies to do so, but I'm not an expert in any of them as far as I'm concerned. I don't like the area my current job is in so I'm looking to move. While job searching though, I'm starting to really doubt my professional skills. Is this normal?

very normal! maybe skill up, get some random certification (like certified dreamweaver) or whatnot

maybe you could also get a part time job or do some freelancing to build up more experience

Don't doubt yourself, just know your stuff. I also work at an agency and they always want you to know everything under the sun like an expert. You can't, so stop trying. Pick the thing that you most enjoy and learn that really well. Have an awareness of other techs, but don't feel obliged to learn them too. You're only human. Its a company's job to make money from you - even if it means making you do 3 peoples jobs!
Relax, enjoy what you're doing and jobs will come along that you'll be proud of.
